Raspberry Souffle with White Chocolate Sauce - Chef Recipe by Daniel Ridgeway
For me, this soufflé is the ultimate in flavour and texture. It isn't too difficult to create. This recipe is perfect for dinner parties as it can be made hours in advance before baking though must be served immediately after baking.

Little truffle was nice. Atmosphere was nice, Service was friendly and overall it was enjoyable. If I was to nit pick, our table leg was a tad wobbly but other than that, its a nice restaurant to have at the Gold Coast.
We're huge fans of Daniels. Everytime we go to Little Truffle we leave delighted and eagerly awaiting out next visit!
Loved Little Truffle - service was great and the food was sensational I had the stuffed zucchini flowers and the confit duck and unfortunately had no room left for dessert :-( next time....
Had a delightful Valentines Day lunch. The food was fabulous.
had a wonderful time ..great food
The perfect place for a special night out. Best food on the Gold Coast!
The Little Truffle Dining Room & Bar is an exceptional dining experience. The quality of the food and atmosphere is unmatched to any other restaurant. The combination of flavors really blow your palate away. Great wine list & desserts...This is one of the top ten best dining experiences I have ever had.
Recently celebrated my partner's birthday in their private dining room and still, two weeks later, our guests are still thanking us for taking them to Little Truffle. What a wonderful restaurant!
I went for my Mum's birthday dinner here last night. It was an absolutely fantastic experience. The mood lighting in the restaurant made for a beautiful setting. We each had Little Truffle's 3 course special, as it was great value. The entree of beef brisket was absolutely beautiful. The meat was so tender and just fell apart in our mouths. Our mains were absolutely wonderful as well. The service in between meals was also fantastic and we felt like we were the only ones in the restaurant. My mum ordered the berry soufflé and unbeknown to any of us (We didn't think we were waiting that long) one of the waiters came over to let us know that the soufflé had flopped and the Chef sent his apologies as he was making another one, so for our wait they brought out a beautiful mousse dessert with freeze dried raspberries. It was absolutely delicious and we were really impressed with the care and service that not only the staff showed us but also the Chef. We will definitely be back as it was great food, great service and great value.
Fabulous evening with our girls , wonderful food , great wine and very accommodating to our two young children . Just what we needed to celebrate our official Christmas dinner, a day late.
Truly delicious food with excellent wine list. Great ambience and service. Highly recommended.
Wow, this place has the whole package highly recommend to any one wanting to know what fine dining is all about. everything was perfection.
Great menu!! Couldn't decide what to order. The charcuterie section to the menu I enjoyed too. The beef carpaccio cannot be passed!!! Amazing! It has a cozy feel to the place. Nice wine list and not too expensive, I grabbed a great Spanish bottle for $40... Thoroughly enjoyed. Only downside for me was the number of waiters I had come to my table, 4 different waiters throughout the night... Very small criticism!
Beautiful night, always a treat
There is very little not to love about this restaurant. Great, quiet location, a choice between modern and traditional dining atmosphere, and great service. Then there's the food..... There is nothing on this menu I haven't absolutely loved! The stand outs for me are the wagyu brisket, anything from the deli, the seared scallops and definitely the panna cotta desert. Delicious! This restaurant deserves its reputation as a fine dining experience!
We entered Little Truffle through the rear doors, on Bondi Ave and were seated immediately in the rather less grand, lower section of the restaurant. Nice mirrors did not add back a romantic atmosphere taken away by echo-ey tiled floor and over-bright lighting. So we just asked politely to move up to the front of the small restaurant and then our night truly began. Ham hock terrine was excellent with nice sour dough. My partner had salami with cornishons which was excellent too. Beef cheeks served on the smoothest mash potato was perfectly cooked. Succulent fall-apart meat and delicious mushrooms. The pancetta seemed at first like overkill, but it did make the dish. The desert was not to my taste - Raspberry gremolatta on vanilla panne cotta. I would have preferred without the topping. Great cheese board too.
Possibly some of the best food I've ever eaten. The assiette of desserts was heaven on a plate.
Where to begin? Very rarely does one come across a restaurant like Little Truffle that is outstanding in so many ways that leaves a foodie like me with my mouth hanging open. I will start by saying this restaurant is a gem. If you are looking for dining experience that provides you with the whole package experience then this Little Truffle is one you can not overlook. The food was beautifully prepared without being pretentious and so full with flavour that even thinking about it makes my mouth water. One can really feel the passion the chef put into dish. But food alone isn't enough to give a great dining experience. Service was friendly, efficient, but most importantly the wait staff are knowledgeable and confident in their recommendations. Especially the wine matching with the different dishes was extraordinary. You definitely do not need to bring your own wine for this restaurant. At the end of the night we had another pleasant surprise: The bill was much cheaper than I expected! There were two of us and we only spend $200. Considering we had 2 different wines and sampled a large part of the menu, I expected the bill to be well over what I paid. This is truly a magnificent restaurant and I already look forward to my next visit.
It's no secret that there is a lack of good food options on the Gold Coast and although Little Truffle does not set the world on fire ( yet ) their willingness to offer an uncomplicated well thought out menu and exceptional service is refreshing. Produce is fresh and the atmosphere is warm. Recommendation would be the Pan Seared Scallops for starter and with reasonable size meals the Panna Cotta is a nice light finish to the night. Only criticism is the limited Wine selection. Overall a great experience and we look forward to seeing these guys succeed.
Thank heavens for this new, absolutely stunning restaurant! Our table decided to share both first and second courses, and in doing so were treated to a range of the most sublime tastes and textures we'd had for quite some time.I know I get excited about food but we're talking REALLY beautiful food here, with each mouthful a blessing..or perhaps I should just thank chef Daniel Ridgeway for being born.
Christian and his team provided us with the sort of service I have missed..trully genuinely happy service with great timing and excellent knowledge of their product.Very personal, warm but in no way intrusive..We were even given the opportunity to get up close and personal with an actual large and georgous Black Winter truffle !! Now that was certainly a first !
Little Truffle is without doubt the best new addition to the coast for some years. It had won my heart AND my palate !!
Had a great meal, friendly staff, good luck.
