Almond Dacquoise, Chocolate Cremeux, Whipped Ganache, Almond and Miso Ice Cream- Chef Recipe by Geoff Abel
The trick to this recipe is sourcing high-quality chocolate. The dessert will only be as good as the chocolate. Whipping the ganache provides a beautiful airy texture. The miso in this dish gives the ice cream salted caramel notes. Bonus points for making your own miso for the ice cream. If you don't have an ice cream machine, good quality store-bought salted caramel ice cream is your next best thing!

A great and tasty set menu for lunch!
Wow! Where to start, the whole experience was just perfect. We arrived on twilight and were quickly seated, the two waitresses that took care of us for the night were exceptional. Our glasses were never empty, our questions answered and most importantly they were passionate. We had the 5 course meal and my partner and i shared each dish so we both didn't miss out. We were pleasantly surprised at the perfect sized portions and were blown away with the tastes in each dish. No dish was lacking for flavour however our favourites were the Crab and the Bug. The deserts were to die for with the creamed rice just melting in your mouth and the sorbet bursting with flavour and crunch. The Long Apron has now become our all time favourite restaurant on the coast, it is worth the drive.
I recently celebrated my 60th birthday at The Long Apron with 10 close family members and friends. They all agreed that the food was some of the best they had ever tasted, if not THE best. The only negative feedback was some people were cold with a breeze coming through a side entrance but it was unusually cold and windy for this region. I would definitely recommend this dining experience to anyone and everyone.
Tasting menu has to be on everyone's bucket list. Truly inspiring presentation and flavours. Warm personal service, attentive, never overbearing. Lovely location, overall The Long Apron was a faultless dining experience. And we all know how hard these are to find.
simply superb, we were amazed, australias best kept secret, but don't tell anybody....
