200ml lime juice
4 red chilli (birds eye)
2 garlic gloves
4 Coriander roots
Fish sauce to taste
Palm sugar to taste
Crush garlic, chilli and coriander root in a mortar and pestle until is makes a fine paste. Add lime juice, palm sugar and fish sauce to taste.
Should be hot, sweet, salty and sour – adjust accordingly.
