NY Steakhouse T-bone with Compound Butter - Recipe by CheatMeats



Ingredients

T-bone steak
Salt
1 brown onion

Compound butter:

3 garlic cloves
1/2 shallot
1 red chilli
Fresh Italian parsley
100 g unslated softened butter
1 lemon
Olive oil

Method

Remove the T-bone steak from the fridge and allow to temper on the bench for 20-30 minutes.

Season the T-bone steak with plenty of salt on all sides, including the fat cap.

Slice brown onion into thirds and place straight onto a skillet set over medium heat.

Place the steak on the same skillet and grill for 4 minutes each side.

Compound butter:

In a small mixing bowl combine 3 finely diced garlic cloves, 1/2 a finely diced shallot, 1 finely diced red chilli, chopped fresh Italian parsley, 100 g unsalted softened butter and the zest of a lemon.

Tightly roll up the compound butter with baking paper and set in the fridge.

Char the fat cap then remove along with the grilled onion.

Preheat a cast iron pan over high heat with some olive oil.

Place the sliced steak back into the hot pan as well as the grilled onion.

Add slices of the set compound butter on top of the steak and grill until the butter has melted.

Remove and season with salt, then serve straight away in the sizzling hot pan.
