45mL Old Young's Pavlova Vodka
15mL DOM Benedictine
20mL fresh lemon juice
10mL Gomme
Dash of Fee Brothers Rhubarb Bitters
15mL (5 drops) Wonderfoam/egg whites
Pinch of dehydrated raspberry powder
Put all ingredients in cocktail shaker. Dry shake to create the foam.
Add ice to the cocktail shaker. Wet shake until cold.
Double strain into a chilled coupe glass.
Garnish with raspberry powder.
