10 cooked Tassal Australian Tiger prawns
4 slices soft brown or white bread
1 Tbs garlic aioli
1 Tbs chilli oil
1 pack salt and vinegar chips
1 cup iceberg lettuce, shredded
Chilli oil:
10 long red chillies
1 tsp dried chilli
1 tsp ginger, minced
2 cloves garlic, minced
1/2 tsp lemon pepper
Zest and juice of one lemon
1/4 cup fresh oregano, chopped
2 cups olive oil
1 tsp salt flakes
To make chilli oil:
Place oil in a pot and bring to a sizzling temperature (5 minutes on medium heat). Once your oil is hot, carefully add both kinds of chilli, ginger, garlic, lemon zest and let cook for 15 minutes until crunchy. Take off the heat, add lemon juice and oregano, let sit to chill and place in a jar until needed.
To make Tiger prawn sandwiches:
In a mixing bowl add the garlic aioli, chilli oil and prawns.
Season with salt and pepper, and mix until combined.
To assemble prawn sandwiches, add 1-2 tablespoons of prawn mix on a slice of bread, top with shredded iceberg lettuce and a handful of salt and vinegar chips.
Serve immediately with a handful of napkins to catch the crumbs.
