15mL Thyme syrup (1/2 sugar 1/2 thyme water)
60mL Penny Weight Amontidillo Sherry
2 slices of lemon
60mL Tropo sparking white wine
Sprig of thyme
Prepare the syrup by boiling 1 cup of sugar, 1 cup of water and 1/2 bunch of thyme for 4 minutes.
Let sit until cool and strain.
To make the cocktail, muddle the 2 slices of lemon in a cocktail shaker to release the juice and oils from the pith, add 60 mL sherry, 15 mL thyme syrup and top with ice.
Shake hard and fast then single strain into a wine glass or high ball.
Top with the 60 mL of sparking wine and add ice and give it a quick stir.
Garnish with a sprig of thyme that has been clapped in between the hands to release the aromas.
Serve.
