1/4 cup (60mL) sweet chilli sauce
2 Tbs sweet soy sauce
2 Tbs oyster sauce
2 Tbs peanut oil
600 g beef rump steak, thinly sliced
1 red onion, cut into thin wedges
3 garlic cloves, crushed
1 bunch baby broccoli, cut into 5cm lengths
450 g packet microwavable jasmine rice
100 g snow peas, trimmed
3/4 cup (120 g) cashews, toasted, chopped
Combine the sweet chilli sauce, soy sauce and oyster sauce in a small jug.
Heat 2 teaspoons of the oil in a wok or large frying pan over high heat. Stir-fry half the beef for 2-3 minutes or until brown. Transfer to a bowl. Repeat with 2 teaspoons of the oil and remaining beef. Wipe the wok or pan clean.
Heat the remaining oil in the wok or pan. Add the onion. Stir-fry for 2 minutes. Add the garlic and broccoli. Stir-fry for 2 minutes or until just tender.
Meanwhile, heat the rice following packet directions.
Return the beef to the wok or pan with the snow peas, cashews and soy sauce mixture. Stir-fry for 1-2 minutes or until heated through and well combined. Serve with the rice.
