Bouncy Brekky Bites - Recipe by Julia Tellidis and Lauren Skora

Ingredients

Base:

1 1/2 cups rolled oats
1 cup milk of choice
1 cup filtered water or bone broth

Mix and match extras:

1/2 chopped banana
1/2 grated apple
1/4 cup frozen berries
1 tsp ground cinnamon
1 Tbs hemp seeds
1 Tbs ground linseed (flax seed)
3 serves liver powder (stirred in once the mixture is off the heat)
1 tsp honey (omit honey for babies under 12 months)

Gelatin:

3 Tbs grass-fed gelatin
120mL filtered water

To serve:

Top with your yoghurt of choice and our berry good jam (page 275).


Method

Add the base ingredients to a saucepan over a low heat and stir until all the liquid is absorbed by the oats.

Stir in your extras of choice.

In a small mixing bowl, bloom your gelatin by stirring the gelatin and water together until the mixture becomes fluffy. This takes roughly 30 seconds.

Pour the mixture into the saucepan with the base ingredients and stir until the gelatin mixture has completely melted.

Pour into a medium-sized glass container with a flat bottom or silicone moulds and leave to set in the fridge for at least 3 hours (or ideally overnight).

Cut into age-appropriate, finger-shaped pieces or into bite-sized pieces for babies over 9 months.

Swapsies:

For a softer texture, reduce gelatin to 2 tablespoons and water to 80mL.

Store in the fridge for up to 5 days in an airtight container.
