Brownies:
150g butter
1 cup brown sugar, firmly packed
2 eggs
1/2 cups plain flour
1/2 cups cocoa powder
Ice cream:
4 cups vanilla ice cream, slightly softened
800g chocolate chips of your choice
1 tsp oil
Preheat oven to 160 C and prepare a 13 x 9 inch pan, lined with baking paper and dusted with cocoa powder.
In a bowl, cream butter and sugar until light and fluffy. Add eggs one at a time on low mixing speed.
Mix through flour and cocoa and bake for 25-35 minutes. Allow to cool completely.
Remove brownie from pan and cut in half, lengthways. Spread ice cream on one half and top with the other half. Freeze until firm (2-4 hours).
Place chocolate chips and oil in a microwave safe bowl and melt in microwave at 30 second intervals until chocolate is melted and smooth. Dip each sandwich into the chocolate and place on a sheet of baking paper until set.
Wrap individual sandwiches in baking paper and freeze them until ready to serve.
