Simple Syrup:
1/4 cup water
1/2 cup sugar
Pickling Simple Syrup:
1/4 simple syrup
1/4 cup pickling liquid from a jar of Pepperoncini capsicum
2 basil leaves
Citrus Simple Syrup:
1/4 cup simple syrup
1/8 cup lime juice, fresh squeezed
1/8 cup lemon juice, fresh squeezed
Margarita:
30mL pickling simple syrup
120mL citrus simple syrup
90mL tequila (we suggest Arette Blanco)
Salt for rimming the glass
2 tsp balsamic vinegar
Basil leaves and cherry tomatoes for garnish
Simple Syrup:
Combine water and sugar over medium heat and simmer until the sugar is dissolved.
Pour the liquid into a container and refrigerate unti cold.
Pickling Simple Syrup:
Combine simple syrup with pickling liquid.
Gently crush basil leaves and add them to the pickling syrup.
Let them combine for a few minutes, then remove leaves.
Citrus Simple Syrup:
Combine simple syrup with lime and lemon juice.
Margarita:
Combine pickling and citrus syrup with tequila.
Leave to chill in refrigerator.
Rum the rim of a glass with a lime and dip the edge into salt.
Fill glass with ice and add margarita mix.
Using a teaspoon, gently drizzle the balsamic vinegar around the inside edge of the glass.
Garnish with basil leaves and cherry tomatoes on a cocktail skewer.
