280 g garlic naan
1 1/2 cups shredded pizza cheese
1/2 red onion, thinly sliced
4 free-range eggs
1 long green chilli, thinly sliced
1/4 bunch coriander, sprigs picked
Preheat oven to 180 C/160 C fan-forced. Line two large baking trays with baking paper.
Place two naan on each baking tray. Top with cheese and onion. Make a well in the centre of cheese and onion. Crack an egg into each hole.
Carefully transfer trays to oven. Bake for 8 minutes, or until egg is just set. Top with chilli and coriander. Serve.
