400 g cooked chicken breasts, cooked and torn or sliced
80 g cherries, pitted and quartered
2 medium shallots, sliced
200 g mixed salad leaves, washed and drained
Dressing:
4 Tbs olive oil
1 pinch salt
1 pinch cracked black pepper
1 Tbs red wine vinegar
1 Tbs Dijon mustard
Combine all of the dressing ingredients and set to one side.
Slice or tear the chicken and combine in a bowl with the cherries, shallots and salad leaves.
Serve the salad with the dressing on the side.
