Chocolate Brownie Slab Cake



Ingredients

375 g dark 45% cooking chocolate
470 g unsalted butter
1 cup self-raising flour
1 cup plain flour
1/2 tsp bicarb of soda
1 cup cocoa powder
2 1/2 cups firmly packed brown sugar
5 eggs
1 1/4 cups milk
400 g vanilla frosting

Method

Preheat oven to 180 C/160 C fan-forced. Line a 6 cm-deep, 23 cm x 33 cm (base) roasting pan with baking paper, extending 3 cm above edges on all sides. Place chocolate and butter in a medium saucepan over low heat. Stir for 5 minutes or until melted and smooth. Cool.

Sift flours, bicarbonate of soda and cocoa in a large bowl. Stir in sugar. In a separate jug, whisk together eggs and milk until combined. Add egg mixture and chocolate mixture to flour mixture and stir until just combined. Pour into the prepared pan.

Bake for 1 hour 10 minutes or until a skewer inserted at centre comes out clean. Stand cake in pan for 15 minutes, then transfer to a wire rack to cool completely. Combine frostings in a large bowl. Swirl frosting over top of cooled cake. Cut into pieces. Serve.
