Christmas Honey Ham - Chef Recipe by Paul Smart.

Ingredients

250 g honey
150 g maple syrup
5 pieces of star anise
10 cloves
5 whole cinnamon
80 g brown sugar

2 kg-5 kg leg of ham

Method

Place honey, maple syrup and brown sugar in a pot. Add all the loose spices and bring to the boil. Simmer for 2-3 minutes.

Prepare the leg of ham by peeling off the rind and scoring the fat with a knife.

Pour the hot honey maple mix over the leg of ham. Place in an oven at 180 C and bake for 55-70 minutes.

Glaze the ham with the pan juices every 15-20 minutes until golden brown on the outside and the ham is hot in the centre.

Carve and enjoy!
