Classic Wok-fried Southern Rock Lobster, Three Onion Textures - Chef Recipe by Kwok Wai Shum

Ingredients

1kg live Southern rock Lobster
35g red onions
35g shallots
10g fried shallots
20g soy sauce
1 tsp dark soy sauce
1 tsp oyster sauce
1/2 tsp sugar

Method

Wok frying:

Heat your wok over high heat until it i;s very hot. Add the vegetable oil and swirl it around to coat the wok evenly.

Add the sliced shallots and onions. Stir-fry for about a minute or until they become fragrant.

Add the lobster pieces to the wok and stir-fry for 2-3 minutes until they start to turn opaque.

Pour in the oyster sauce, soy sauce, and sugar. Stir-fry for another 2-3 minutes to coat the lobster with the sauce.

Garnish your wok-fried lobster with additional shallots and onions for a fresh and aromatic touch.

Transfer the wok-fried lobster with shallots to a serving plate and enjoy while hot
