500g sliced strawberries/raspberries/any berry of choice
50g vanilla sugar
2 cups heavy cream, chilled
4 x 10-15 cm meringues, broken into pieces
Place berries in a glass or ceramic bowl and dredge with vanilla sugar.
Pour the cream into the bowl you want to serve the eton mess and beat it until lightly whipped.
Fold the strawberries and meringues into cream- it should be faintly marbled.
Serve immediately.
