Lemon myrtle tonic:
200mL water
25 g caster sugar
15 g fresh lemon myrtle
Lemon myrtle salt:
100 g Murray pink river salt
30 g dried lemon myrtle
Girri Girri Margarita:
60mL Lyre's agave blanco
30mL lemon myrtle tonic
5mL sugar syrup
30mL lemon juice
Ice
Dried lemon slice
Wet the rim of a martini glass and Dip the glass into the lemon myrtle salt so it sticks.
Add 5 cubes of ice, the agave blanco, lemon myrtle tonic, sugar syrup and lemon juice to a cocktail shaker.
Shake well.
Double strain into glass.
Float the lemon slice on top to garnish.
