Slice of organic sourdough
1/2 an avocado
50 g preserved lemon
20 g shiso
10 g mint
50 g tahini dressing
Sprinkle of dukkah
Tahini Dressing:
240 g tahini paste
130 ml lemon juice
2 grated cloves of garlic
120 ml water
120 ml sunflower oil
Salt and pepper to taste
Tahini Dressing:
In a food processor, add tahini, lemon juice and garlic. Blend together, then slowly add the water until smooth. Add the sunflower oil and check seasoning.
Toast sourdough and finish on the grill with olive oil. Spread tahini dressing on toasted bread, top with half cut-half crushed avocado pieces, shiso, mint, preserved lemon and dukkah.
