1 cup of shredded green papaya
Fresh coriander, chopped
Fresh mint, chopped
Fresh Thai basil
Green beans
1 handful of bean shoots
1/4 red onion, sliced
1 cup cherry tomatoes, halved
Dressing:
1/4 pineapple, chopped
1 Tbs lime juice
2 Tbs palm sugar
1 Tbs fish sauce
1 Tbs fresh ginger, grated
1 tsp fresh chilli, chopped
1 tsp garlic, crushed
Garnish:
Fried onion
Chopped peanuts
1/4 lime
Combine all of the salad ingredients into a big bowl.
In a separate bowl, add all of the ingredients for the dressing and mix well.
Drizzle the dressing over the salad and combine until all is coated.
To serve, add the salad onto a plate and garnish with the fried onion, peanuts and lime juice.
