Grilled Balsamic Tofu with Cauliflower Cilantro Rice and Avocado



Ingredients

1 packet House Foods Extra Firm or Super Firm Tofu, drained and pressed well
1/4 cup balsamic vinegar
2 Tbs extra virgin olive oil?
1 medium head cauliflower, grated
1 avocado, sliced
1 bunch cilantro, roughly chopped
Salt and pepper to taste
2 Tbs vegan mayonnaise
1/2 tsp lime juice
1/2 tsp sriracha sauce
1/4 tsp minced garlic or garlic paste

Method

Remove tofu from container. Drain and press dry.

Slice tofu into ½ in slices and set aside.

Add olive oil, vinegar, salt and pepper to a bowl and whisk to combine. Pour over tofu and marinade for 20 minutes.

Add the marinated tofu to a grill and cook for 3 minutes on each side. Set aside.

Combine grated cauliflower and chopped cilantro in a large bowl. Separate mixture into 4 serving bowls. Top with grilled tofu and sliced avocado and serve with sriracha mayo.

Sriracha mayo:

Stir garlic, mayonnaise, Sriracha, and lime juice in a small bowl to combine; season with salt if needed.
