125mL honey
1 Tbs thinly sliced ginger
60mL water
Ice cubes, to serve
80mL lemon juice
40mL Scotch whisky
40mL single malt Scotch whisky
Lemon rind twists, to serve
Combine the honey, ginger and water in a small saucepan. Bring to a simmer over medium heat.
Alternatively, combine the honey, ginger and water in a microwave-safe bowl. Heat in the microwave on High for 2 minutes. Strain the honey syrup through a fine sieve into a heatproof jug or bowl, discarding the ginger. Set aside to cool.
Fill a cocktail shaker with ice. Add the cooled honey ginger syrup and lemon juice. Shake until well combined. Fill 2 serving glasses with ice. Strain the honey mixture into the glasses. Top with blended Scotch whisky and single malt Scotch whisky.
Garnish with lemon rind.
