Lamb and Broccoli Fried Rice



Ingredients

540 g lamb leg steaks
1/3 cup (100 g) Thai fried rice paste
300 g broccoli florets
450 g packet microwavable jasmine rice
2 eggs, lightly whisked

Method

Place lamb in a shallow dish. Add 2 tablespoons fried rice paste and rub lamb to coat. Spray a large non-stick frying pan with olive oil spray and heat over medium-low heat. Cook the lamb for 5-6 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 5 minutes to rest.

Return pan to medium-high heat. Cook broccoli, tossing, for 3-5 minutes or until bright green and tender-crisp. Add rice, remaining fried rice paste and 1 tablespoon water. Cook, stirring, for 2 minutes or until the mixture is combined and heated through. Add egg and cook, stirring, for 2-3 minutes or until egg is cooked through and mixture is well combined.

Slice the lamb. Divide the fried rice among serving bowls and top with the lamb to serve.
