2 x 150 g salmon fillets
1 lemon
6 stalks asparagus
6 stalks broccolini
2 bunches cherry truss tomatoes
2 medium potatoes, cut into small chunks
2 sprigs thyme
1 Tbs olive oil
Salt and pepper to taste
Preheat oven to 200 C. Line a tray with baking paper and spray with a little olive oil.
Mix potato chunks with thyme, half a tablespoon of olive oil and juice of half a lemon.
Place on tray and cook in the oven for 15 minutes. Turn potatoes, add tomatoes and cook for another 10 minutes.
Place salmon on top of potatoes with broccolini and asparagus, spray with a little olive oil and season with salt and pepper. Return to the oven for another 10-15 minutes.
Serve immediately with a squeeze of lemon and green salad.
