1 cup rolled oat flakes
3/4 cup smooth peanut butter
80 g whole milk
2 Tbs vanilla protein powder
4 Tbs pistachio nibs
2 Tbs ground flaxseeds
6 Tbs pure maple syrup (preferably amber syrup for its rich taste)
1 tsp vanilla extract
1 pinch of cinnamon
4 Tbs ground pistachio
In a large bowl or a food processor, combine the peanut butter, maple syrup, vanilla extract, protein powder, milk, ground flaxseeds,
oats and cinnamon.
Pulse or mix until well combined.
Add the pistachio nibs and mix a few more times.
Using damp hands, roll into 20 balls (about 30 g each) then roll them into the ground pistachio.
Chill for 30 minutes until firm then serve.
