8 fresh mint leaves
1 Tbs + 2 tsp pure maple syrup (preferably golden grade for its delicate taste)
2 quarters of fresh lime, skin on
1 1/5 cups soda water
Ice
Place the lime quarters and maple syrup in a serving glass and muddle for about one minute to release the juice from the lime.
Crush the mint in your hands to release the scent then place it in the glass and press gently with the muddler 4–5 times.
Top the mix with sparkling water and ice and stir until combined.
Garnish with slices of lime or some extra mint and serve.
