Moroccan Beef Stew by Scott Gooding

Ingredients

500 g chuck steak – diced
1 Tbs ghee
2 onions – peeled and finely chopped
6 garlic cloves – peeled and finely chopped
1 tsp paprika
1 tsp sweet paprika
1 Tbs ras el hanout
2 tsp cumin
Zest of 1 lemon
400 g tomatoes
500 mL beef broth
Handful green olives – pitted halved
Sea salt
Black pepper

Method

Add ghee to a large sauce pan on medium heat.

Add onion and garlic and sauté for 2-3 mins.

Add the spices and stir.

Increase the heat and add the beef to brown off.

Once browned off add the lemon zest, tomatoes, beef broth and olives.

Reduce heat to simmer, pop on the lid and cook for 90 minutes.

Remove lid and allow sauce to thicken (20 mins).

Season.

Remove from heat.
