Drizzle of extra virgin olive oil
8 chicken thighs, boneless, skin on
330mL lager
2 garlic cloves, finely chopped
Small bunch of rosemary, finely chopped
5 sage leaves, finely chopped
Salt and freshly ground black pepper
Preheat the oven to 180 C fan.
Drizzle the olive oil into a large baking dish, then add your chicken thighs, skin-side down. Pour over the beer and season with salt and pepper, then scatter over your chopped garlic and herbs. Cover with foil and bake for 30 minutes.
Remove the foil, turn over the chicken so it’s skin-side up and bake uncovered for a further 30 minutes until golden and crispy. Spoon some of the beery sauce on top to serve. Buon appetito!
