Odin's Elixir Cocktail - Recipe by Scott Green



Ingredients

20mL Plantation 3 star white rum
20mL Plantation original dark rum
20mL Rhubi Mistell
45mL hibiscus syrup
2mL cinnamon tinture
15mL lime juice
4 dashes Peychaud's bitters
80mL soda water
20mL aquafaba

Method

To make the Hibiscus syrup, first make a sugar syrup with 3 cups of caster sugar and 3 cups of water.

Place both in a saucepan over low heat until the sugar dissolves. Then add 30 grams of dried ground hibiscus flowers, remove saucepan from heat and allow to steep for approximately 20 minutes then strain out the dried hibiscus.

To make the cinnamon tincture, break up 6 cinnamon sticks and place in a clean glass jar with 1 cup of
vodka. Seal jar and leave to infuse for 2 weeks, then remove cinnamon.

The cocktail:

Add all ingredients except soda water to a cocktail shaker with ice. Shake cocktail then remove ice and dry shake cocktail again This will activate the proteins in the aquafaba and create a beautiful foam. Strain cocktail into glass, Top with soda water and ice.

For garnish, use a flavour blaster aroma kit loaded with cinnamon and lemongrass aroma to create smoke bubble on top of glass. Be careful not to let smoke bubble pop when delivering drink to table.
