Old Wagyu Cocktail - Recipe by Hide Steak & Bar



Ingredients

60mL Wagyu fat washed Glenfiddich 12
15mL blood orange oleo
2 dashes angostura aromatic bitters
Orange twist for garnish
Large ice cube

Method

Place large ice cube in whisky glass, set aside to chill.

In a mixing glass, combine 60mL fat-washed whisky with 15mL blood orange oleo.

Add bitters. If using Angostura aromatic bitters straight from the bottle 2 dashes will suffice; if using a dasher bottle, add 3-4 dashes.

Fill mixing glass with ice and stir.

Taste cocktail frequently by dropping a small amount on the back of your hand to evaluate dilution. Typically, 8-10 seconds softens the flavours and melds them together beautifully while providing adequate chilling.

Strain cocktail into whisky glass.

Take a large swath of orange peel and twist it over your cocktail to express as much oil as you can onto the drink’s surface. Twist the swath tightly to squeeze out more oil and plunge the swath into the drink to allow those oils to infuse into your cocktail as you drink.
