24 oysters, shucked, drained and rinsed
4 Tbs butter
2 shallots, diced
1 stalk celery, diced
100 g spinach, washed and drained
200 g Panko breadcrumbs
1 Tbs tarragon
2 Tbs tabasco
80 g Parmesan, grated
Heat up the grill on the oven and prepare a baking tray with shaped kitchen foil to hold the oysters steady.
Place the oysters on the foil.
In a pan on medium heat, fry the butter, shallots and celery for 3 minutes.
Add the spinach to the pan and cook for a further minute until it is wilted.
Remove from the heat and combine with the breadcrumbs
Cover the oysters with the breadcrumb mixture and grill for 3 minutes until golden brown.
Serve drizzled with tabasco, tarragon and grated Parmesan.
