500 g pizza dough balls
2 Tbs plain flour for dusting
1/3 cup buffalo sauce
2 peaches, destoned, cut into wedges
110 g bocconcini, drained and torn
1/2 red onion, thinly sliced
1/2 roast chicken, meat shredded
1/4 pickled jalapeño
60 g baby spinach leaves
Preheat oven to 220 C/200 C fan-forced. Line two large baking trays with baking paper. Divide dough in half. Using a small amount of flour for each base, roll out each dough portion to a 25 cm-wide round.
Place pizza bases on prepared trays. Spread with sauce, leaving a 1 cm border. Top bases with peach, bocconcini, onion, chicken and jalapeños.
Bake pizzas for 15 minutes or until crust is golden and toppings are heated. Scatter with spinach. Serve sliced.
