Poached Eggs with Avo and Hummus - Recipe by 4 Ingredients



Ingredients

2 regular eggs
1/4 cup (65 g) gluten-free hummus
1/2 large avocado (110 g)
1 Tbs (5 g) fresh dill

Method

Crack each egg into a small ramekin.

Bring a pot of salted water to a gentle boil then start to swirl.

Gently slide the egg into the water and swirl for 20 seconds before sliding the second egg in.

Cook for 3 minutes for a firm white, but still runny yolk.

Dollop 2 tablespoons of hummus onto two plates, gently smoothing across the plate.

Peel the avocado and slice lengthways.

With the palm of your hand, gently press down on the avocado to create a fan-like pattern.

Take half and place on the hummus.

Use a slotted spoon to remove the egg and rest atop the avocado.

Season with sea salt and cracked pepper and serve sprinkled with fresh dill.
