2 tsp ground cumin
2 tsp ground coriander
2 tsp ground paprika
2 garlic cloves, crushed
1 Tbs red wine vinegar
2 Tbs olive oil
8 chicken drumsticks
1 red onion, cut into wedges
1/4 cup (40 g) pomegranate seeds
1/4 cup (35 g) pistachio, toasted, coarsely chopped
Greek-style yoghurt, to serve
Coriander leaves, to serve
Preheat oven to 200 C.
Combine cumin, coriander, paprika, garlic, vinegar and oil in a large ceramic dish. Add the chicken and toss to coat.
Place the chicken in a large baking dish with the onion. Cook for 40 minutes or until the chicken is cooked through.
Sprinkle chicken with pomegranate seeds and pistachio. Serve with the yoghurt and coriander leaves.
