Poached Hapuka, Artichokes and Garlic Mayonnaise - Chef Recipe by Josh Niland
Here is my interpretation of a wonderful meal I had as an apprentice at restaurant Bistrode.
2 cups almond meal
1/2 cup raw cacao powder
1/2 cup GF crunchy peanut butter
1/4 cup raw honey
Line a 17 cm x 17 cm loaf tin with baking paper.
Into a bowl, place all the ingredients with a generous pinch of sea salt and stir to combine.
Press the mixture into a prepared tin and refrigerate for at least 1 hour.
Slice to serve.
Store in an airtight container in the refrigerator.
