4 whole raspberries (fresh or frozen)
45mL gin
20mL lemon juice
20mL elderflower cordial
15mL sugar syrup
1 egg white or 30mL aquafaba
Sparkling water
Shake all the ingredients, then strain the over ice. Finally, add a splash of sparkling water, garnish with a
fresh raspberry.
*Aquafaba is the viscous water in which legume seeds such as chickpeas have been cooked, simply drain off tinned chickpeas and use the remaining liquid.
