Salmon and Cream Cheese Sandwich Bites



Ingredients

2 x 150 g packets hot smoked salmon natural, skin removed, flaked
1/4 cups (75 g) mayonnaise
1 Tbs lemon juice
2 tsp horseradish cream
1 celery stick, finely chopped
2 radishes, finely chopped
1/4 cup (35 g) slivered almonds, toasted
2 Tbs finely chopped chives
2 Tbs finely chopped dill
1/3 cup (80 g) spreadable cream cheese
6 slices wholemeal sandwich bread
6 slices white bread sandwich bread
Thinly sliced radish, to serve

Method

Combine the salmon, mayonnaise, lemon juice, horseradish cream, celery, chopped radish, almonds, chives and dill in a large bowl. Season.

Use a 4 cm round pastry cutter to cut 4 discs from each bread slice. Spread cream cheese evenly over bread discs. Spoon the salmon mixture evenly over half the bread discs and spread to the edges. Top with the remaining bread discs. Arrange on a platter and top with sliced radish and secure with toothpicks.
