Sheer Khurma



Ingredients

200g vermicelli or spaghetti
4 cups (1 litre) milk
150g ghee or butter
30g cashews, crushed
30g almonds, crushed
30g pistachios, crushed
30g peanuts, crushed
30g walnuts, crushed
30g sultanas
30g dates, pitted and chopped
½ cup (100g) sugar (any type, or honey)
Cinnamon sticks, to garnish
Glacé cherries, to garnish

Spice mix:

2 star anise
2 cinnamon sticks
1 vanilla bean
1 tablespoon cardamom pods

Method

Cook the vermicelli or spaghetti in a pot of boiling water until al dente, and drain.

In a separate saucepan, combine the milk, ghee, crushed nuts, sultanas, dates, and spice mix. Boil the mixture for 5 minutes.

Lower the heat on the mixture and stir in the cooked vermicelli (or spaghetti). Simmer and stir occasionally until it is a smooth and creamy consistency. Add the sugar, and stir until completely dissolved.

Serve in individual bowls, and garnish with cinnamon sticks and glacé cherries.
