400 g striploin steak
5 Tbs olive oil
4 medium figs, halved
2 Tbs balsamic vinegar
4 tsp honey, divided
2 tsp wholegrain mustard
200 g rocket
1 medium red onion, peeled and finely sliced
80 g blue cheese, crumbled
Brush the steaks with a little oil and cook in a griddle pan on high heat for 3 minutes on each side for medium rare. Wrap in foil and rest for 5 minutes.
Toss the figs with 1 tablespoon of balsamic vinegar and 1 teaspoon of honey. Cook in the griddle pan for 1 minute on each side. Whisk the rest of the vinegar, honey, oil and mustard together in a small bowl.
Add the rocket, figs, red onions and blue cheese to a large bowl, pour over the dressing, toss well and serve with thinly sliced steak on top.
