Strawberry French Toast

Strawberry French Toast



Ingredients

250 g punnet strawberries, hulled, halved
1/4 cup (40 g) icing sugar mixture
1 tsp white vinegar
1 Tbs water
2 eggs
1/3 cup (80mL) milk
1/2 tsp ground cinnamon
40 g butter, chopped
1 loaf pane di casa, cut into 8 slices
2 Tbs icing sugar mixture, extra
1/4 tsp ground cinnamon, extra
Strawberries, extra, halved, to serve

Method

Combine strawberries, 2 tbs icing sugar, vinegar and water in a medium bowl. Stand for 5 mins. Place strawberry mixture in a small saucepan over low heat. Cook, stirring occasionally, for 5 mins or until strawberries soften and a sauce forms. Set aside.

Meanwhile, whisk eggs, milk, cinnamon and remaining icing sugar in a medium bowl. Melt half of the butter in large frying pan on medium heat. Dip 4 bread slices into egg mixture for 10 seconds. Transfer to pan and cook for 1 minute each side or until golden. Transfer to serving plates. Wipe pan clean. Repeat with remaining butter and bread.

Combine extra icing sugar and cinnamon in a bowl. Serve French toast topped with strawberry compote and fresh strawberries, dusted with the cinnamon sugar.
