Stuffed Dates with Whipped Feta, Mint and Nuts - Chef Recipe by Gilaza Pour



Ingredients

10 Medjool dates (or any soft, large dates)
100 g feta cheese
2 Tbs olive oil
1 tsp fresh thyme leaves
10 small fresh mint or basil leaves
10 walnuts (or almonds, cashews, pistachios - your choice)

Method

Whip the feta: in a small bowl blend the feta with olive oil and thyme until smooth and creamy. You can do this with a fork or a small food processor for an ultra-whipped texture.

Prep the dates: slice each date open lengthwise and remove the pit.

Fill them up: transfer the whipped feta into a piping bag (or use a small spoon) and fill each date with a generous amount of cheese.

Add the herbs: place a fresh mint or basil leaf on top of the cheese for a burst of freshness.

Finish with crunch: top each stuffed date with a walnut, almond or your preferred nut for added texture and flavour.

Serve and enjoy: arrange dates on a plate and watch them disappear!

Tips:

Make it extra creamy - add a splash of Greek yoghurt to the whipped feta for a silkier texture.

Sweet and spicy - drizzle with honey and a pinch of chilli flakes for a sweet-heat kick.

Go nuts - try pistachios for a pop of colour.

Vegan swap - use whipped cashew cheese instead of feta.
