500 g toothfish fillets
250mL mirin
250mL saikyo tsubu miso
5 g yuzu skin
3 g salt
Mix together ingredients for marinade.
Marinade fish for 48 hours then oven bake at 200 C for 10 minutes.
Serve with traditional Japanese pickles.
