Ribs:
2 tsp salt
2 tsp cracked black pepper
1 tsp hot paprika
1 tsp chili powder
910 g pork spareribs, membranes removed
BBQ sauce:
1 Tbs olive oil
35 g finely diced onion
1/2 tsp ground cumin
2 Tbs light brown sugar
3 Tbs apple cider vinegar
1 Tbs hot chili sauce
Salt and cracked black pepper, for seasoning
Preheat the oven to 135 C.
In a small bowl, combine the salt, pepper, paprika and chilli powder. Season both sides of the ribs with the spice mixture, then place, meat-side up, onto a large rimmed baking sheet.
Cover the baking sheet tightly with aluminum foil and bake until the meat falls easily from the bones, 3 1/2 to 4 hours.
