2-3 lime wedges
4-5 mint leaves
90mL soju
30mL watermelon syrup
180mL lemonade
1 whole Korean watermelon popsicle: Subakba
1 mint stem
1 lemon slice
1 edible flowers
Muddle 2-3 pieces of lime wedges in your cocktail glass.
Add 4-5 pieces of mint leaves and gently muddle with your squeezed lime wedges to extract the oils where the mint flavours are locked up.
Pour 90mL of Korean vodka – Soju.
Add 30mL of watermelon syrup.
Smoothly mix with 180mL of lemonade to avoid overflow of fizz.
Top off with ice up to 4/5 of your glass.
Add 1 whole Korean watermelon popsicle – Subakba.
Garnish with 1 mint Stem, 1 slice of lemon and edible flowers.
For a sweeter experience, you may wish to melt your popsicle into your cocktail as you drink or simply eat your popsicle separately!
