30mL Yuzu gin
30mL apple liqueur
20mL freshly squeezed lemon juice
15mL housemade yuzu syrup
3 drops vegan foamer
30mL yuzu soda
Zest of a lime
Combine all ingredients in a shaker tin, except the yuzu soda.
Dry shake with the foam to activate and aerate the cocktail. Once shaken, add ice and shake vigorously. Double strain into Collins glass with large tall clear ice cube.
Top with yuzu soda, with foam standing just taller than the glass. Finish with zesting of lime on top
