Zespri SunGold Kiwifruit Salad Waffle Cones



Ingredients

4 Zespri™ SunGold™ Kiwifruit, peeled
1 small banana, peeled
1/2 mango (a cheek of mango)
8 vegan waffle cones
2 cups thick dairy-free coconut yogurt
Lime wedges, to serve

Method

Cut 2 Zespri™ SunGold™ Kiwifruit into 1 cm-ish cubes, then slice remaining kiwifruit into long thin wedges, then place in a large bowl.

Slice banana in half lengthways, then slice into half-moons. Scoop out the mango flesh from the skin, then cut into 1cm-ish cubes. Add to Kiwifruit and gently toss to combine.

Spoon yogurt evenly among waffle cones, then fill cones with Kiwifruit fruit salad mixture. Serve immediately with spoons and a couple of lime wedges on the side, to squeeze over as desired.
