Australia’s only small-batch sourdough-brioche hybrid doughnut maker, Don’t was made to disrupt with its mix of unexpected flavours, challenging preconceived notions of what doughnuts are meant to be. It is creative and reckless – conspired to bring curiosity, unease and the discovery of a new classic – think offerings like strawberries and cream, or dark chocolate cake baked inside the doughnut, with a dark chocolate glaze and cocoa crumble. Perhaps lemon curd with coconut marshmallow tempts; or wrap your hands around a nutty Iranian pistachio doughnut, with sugar glaze and flowers, best washed down with an iced coffee.
