Dine, sip and meet overlooking the idyllic pool at FABRIC Restaurant and Bar on Olive Street in Albury. Nestled in the Mercure Hotel, this restaurant delivers fresh, fun and seriously good food to those on the road and locals looking to linger over breakfast or dinner in trendy surrounds; from a seasonal menu showcasing local produce. Expect fresh and flavoursome breakfast plates such as eggs Benedict, spinach, smoked bacon, poached eggs and Hollandaise on sourdough, while later diners start with seven-spice dusted squid and ponzu sauce. For the main, opt for Thai red curry half shell mussels, fragrant rice and fresh red chilli, or crispy pork belly, pumpkin purée, apple bourbon glaze and edamame; leave room for a decadent dessert of sticky date pudding, butterscotch sauce and ice cream.
