Start with pork belly, macadamia, fennel and Sunset Red caramel, or market fish carpaccio, avocado, buttermilk, chilli oil and lime; moving onto mains like lamb, Piacun beans, labneh, mint, black garlic and jus. Perhaps poached fish, beurre blanc, lemon squash, kale and salsa verde hits the mark; or cheesy gnocchi, with rosé sauce, zucchini, bacon, stracciatella and basil.
