Offering up a taste of some of Daylesford’s freshest produce combined with smooth sophistication and elegant style is Chef Hat-awarded Sault on Ballan Daylesford Road. Views are abundant and inspiring with the restaurant taking in 180-degree vistas of the surrounding lake, lavender fields and forest. Catering to each and every need, Sault will adjust the atmosphere to suit; romantic rendezvous, celebrations or a group getaway, to name just a few. Head Chef, Jack Powlay creates seasonal delights with produce from the onsite gardens and the results shine in starters of cured kingfish, daikon, ponzu, ajo blanco and shiso; before medium-rare eye fillet, beetroot, cocoa nib, beetroot purée and red wine jus. To finish indulgently, delve into chocolate marquise, Frangelico ice cream and hazelnut.

Named after a lavender producing town north of Marseille, Sault is a fully functional Lavender farm producing sumptuous products to take home as a memento of your relaxing stop off.
The menus change seasonally and the head chef regularly meets with local growers and producers to ensure the freshest of seasonal produce is used. Sault caters for dietary requirements and children's meals.
Complement your meal with a walk around the lake or a casual game of Petanque on one of our 3 courses. Or merely sit back on our deck and let your thoughts wander amongst the Lavender allowing your recently consumed culinary delights to settle.
November through to February come and see the spectacular lavender fields in bloom. The most picturesque property in Daylesford comes to life as row upon row of lavender opens. The best time of year for weddings, private functions and romantic evenings.
Sault is a wonderful place to stop off, either on the way into town before checking in to accommodation or on the way home as a final hurrah to a peaceful time in Daylesford.

At Sault our couples are happily enjoying the use of the new chapel overlooking the lake. Guests can enjoy the views in air conditioned comfort and our brides have been extending their walk down the aisle, parking the wedding car at the top of the lavender field and walking down the path to the chapel, sure adds to the wow factor.

Nowhere else ever seems to meet the high standard and delicious food and beautiful ambience of Sault. It is by a long way our favourite restaurant.
Amazing
Great experience at Sault, the tasting menu is to die for, good food, portions, flavour combinations, ingredients and plating. Much better value and quality than other hatted restaurants in the area or Melbourne. Service and location was top notch. A really happy and impressed customer.
We drove out to Sault for their Wednesday locals night, a very cold night. We were greeted by a lovely open fire. After being greeted and shown to our tables we ordered our drinks and our meals arrived in a good space of time. We all agreed that the meal was delightful.Good value.The service was excellent. Had an excellent meal here after an average one at The Lake House the night before. Would be a fantastic setting for lunch in spring.
Had a terrific lunch here recently. Would recomend this place when visiting the area. Interesting wine list with plenty of wines from the region. Service was spot-on.
